BARBÙ is a Mediterranean rooftop restaurant and bar on the 24th floor of Siam@Siam Design Hotel Pattaya. The concept is built around communal dining: shared plates, wood-fired cooking, and an open kitchen that keeps the energy visible. It's also home to Skybar Summer Club, a rooftop pool that's open to non-hotel guests via a Day Pass.
The name, the food, and the layout all point in the same direction: slow down, order too much, and stay longer than you planned.
What is Mediterranean food?
Mediterranean cooking spans the coastlines of Italy, Greece, and Spain. What connects them is an approach, not a recipe: fresh ingredients, bold herbs, olive oil, and dishes built for sharing. At BARBÙ this means dips arriving at the table while the wood-fired oven warms up, fresh fish roasted whole with rosemary and lemon, slow-braised short ribs that took 24 hours to prepare, steak tartare and pizzas pulled from the fire with blistered crusts.
Nothing here is heavy-handed. The format rewards ordering widely and eating slowly.
